Check out this recipe for Mimi’s Pumpkin cranberry quick bread! This healthy recipe is so versatile, it can also be made into muffins. We use a basic boxed oat bread from Krusteaz and chock it up with real pumpkin, fresh cranberries, flax seeds and walnuts. You really can’t mess this bread up so try your own variations! Mimi is my husbands mom, Wendy, and she’s always trying new things in “Mimi’s bread”. One thing I will say is that when she sends us home with one, it never lasts long in our house or anyone else’s for that matter!
Ingredients:
-Krusteaz oat bread (follow the recipe for measurements of oil and water)
-8 oz of fresh pumpkin (about half of a can of 15oz pumpkin)
-1.5 C chopped walnuts (I used chopped but Mimi usually fresh grinds her’s) -2/3 bag fresh cranberries (however much you like cranberries really)
-1/2 C ground flaxseeds
Directions:
Preheat oven to 400 degrees. Combine all ingredients in a bowl and mix until combined. Bake in a lightly oiled bread pan for 40-42 minutes. Enjoy!
