Figo: Lunges and Rosemary Roasted Butternut Squash

This FigoFit & FigoFood episode has us gearing up for Thanksgiving Day!

For FigoFit, Peanut demonstrates a step back lunge and single arm press. This is a great move to tone the shoulders and tighten up the legs! Add this to your workouts or rock a few sets while you’re waiting for that turkey to roast!

Our FigoFood recipe is Rosemary Roasted Butternut Squash. This can be added as a side dish to your fall dinner repertoire, or make to appease the health nut attending your thanksgiving feast! Buon appetito!

-1 butternut squash (peeled and cubed)
-2-3 shallots (quartered)
-4 sprigs of rosemary (chopped)
-2 T Good quality extra virgin olive oil
-freshly ground sea salt & pepper
-crushed hazelnuts (pistachios, walnuts, pinenuts, or pecans may be used also)

Drizzle butternut squash and shallots in oil, and sprinkle with seasonings and hazelnuts. Toss to coat. Roast in a 400 degree oven for 35-40 minutes until squash is soft and caramelized.
